Have you ever had the problem of having left over chicken but you have nothing to do with it? You either throw it away or give it to the dogs at least that is how it used to be in my house. I think my dogs just knew that I was going to have left over chicken when ever I made it in the crock pot. I mean I guess it could get old eating the same food day in and day out…
But anyways I was talking with a friend a couple weeks back about using left over chicken. Meaning making it one night in the crockpot (either 6 or 7 chickens breasts or a whole chicken) and shredding the chicken up to make something as simple as chicken noodle soup or so many other recipes. So the Leftover Chicken Recipes Post began.
I have been on Pinterest the last couple of weeks and have even tried a few of these recipes myself and I can vouch that they are all amazing! Of course I tweaked them to my liking but I love to experiment with things (I can’t help it, it’s in my nature).
There are several different ways you can make shredded chicken. I do mine in the crock pot with a little bit of taco seasoning or garlic. I do almost everything with a pinch of garlic because I just love the taste. here are a few different ways to do it:

These relatively simple chicken recipes can help you give more purpose for you chicken. For example: The BBQ shredded Chicken can be used for BBQ sandwiches one night and then for another night the BBQ Chicken Turnovers would be great! Then turn around again and use in a BBQ ranch quesadillas for a lunch. The Spicy Chipotle Shredded Chicken can be used for enchiladas one night, the next night tacos, and then on a pizza to give the ranch bacon pizza a little bit of spice! They are also just a few of the many kinds of shredded chicken you can make!
What I love about leftovers is that you can be creative! A simple spice (not necessarily hot) can change the taste, feel and even look of the chicken entirely. The best part about spice is that sometimes it can blend well or even mask the previous spices. It is so much fun to be able to play up chicken (or any other meat for that matter) and make a 30 minute meal out of it. That is what this post is all about quick simple dinners throughout the week and making enough chicken to last for the entire week.
A friend of mine that I was talking to about this wants to make a whole chicken last her for 4 dinners! I wish I had the will power to stop eating that much… sometimes if the dinner is really really good I just can’t help it! I make about 5-6 chicken breasts at the beginning of the week and use it throughout the week. I sprinkle in the occasional ground beef or steak. If we eat 2 chicken breast a night (relatively) we can usually get 3 dinners and a lunch out of that chicken.
