Gluten Free Avocado Egg Rolls

It’s Guacamole Roll Time!

Okay, so not my best work on the puns, but these avocado egg rolls are off the chain!  

Seriously, OFF the CHAIN! I am secretly singing that to myself as I take a bite into my last one that I have made from this batch. 

Are you a lover of avocados? Well you are among a great friends here as avocado is my most favorite fruit that doesn’t go into a fruit salad ever! Yes, I had to say it. I only wish I could grow an avocado tree in my backyard, but since there is snow on the ground here yearly (about 5 inches) they will not thrive and house avocado trees do not bare fruit. I guess I will just have to move somewhere more tropical, darn… haha!  

I love just about anything with guacamole and can eat an avocado as a snack. however, I have not always been this way but I am so thankful that I am now! What is your favorite way an avocado is prepared? Mine is probably with chips as guac! Love me some guacamole!

Gluten Free Avocado Egg Rolls gluten free avocado egg rolls 2

Make or find some Gluten Free Egg Roll Wrappers (Recipe found here) need 9-10 egg roll wrappers 
Make 2 recipes of Guacamole (or 4 avocados worth of guacamole) Recipe can be found here: Guacamole Recipe or use your own. 
Coconut oil for frying (about 5 cups) 

Place coconut oil into pan and put it on medium heat. Let the oil warm up while you are wrapping your egg rolls.

Grab your gluten free egg roll wrappers (you can use regular egg roll wrappers but they won’t be gluten free) and Place in a diamond shape pointed towards you and away from you. Place a couple of spoonfuls into the wrapper slightly closer to you. Wrap the point closest to you over the filling and then tuck in sides and continue to wrap. Seal with wetting your finger and wetting that point. Place seal down in the coconut oil once it is hot enough to fry (about 300 degrees Fahrenheit). Fry until golden brown and flip and do the same thing. This will take about 3 minutes on each side. Place on plate covered with paper towels and let cool slightly. Serve plain or with dipping sauce. Perfect with an oriental ginger dressing that is coming soon!

I left my guacamole chunky so that I could really taste the avocado, but it is completely up to you. Just remember the chunkier they avocado is the more likely it will tear the egg roll wrapper so be sure to chop them up a little bit to ensure that doesn’t happen. That would be devastating to not have these avocado egg rolls! 

Can I just say that these avocado egg rolls are simply amazing?! They are the perfect appetizer to have when you are having guests over or having a party out by the pool or in the backyard! They are filling but not too bad and people will be coming back for more and wanting the super secret on how to make them. You can either keep it to yourself or share with the world. You decide!

Gluten free avocado egg rolls 4I was literally so excited when I first made these avocado egg rolls that little perfection of the recipe was needed. You can use any guacamole recipe as long as it has about 3-4 avocados worth of filling. Plus if there is any leftover you can just dig in with some chips or toast to finish it off. Best snack/breakfast/lunch/appetizer or even dinner!

    OK Gabby…this recipe has my name all over it! First of all, anything with avocados is perfect, but then you make them a gluten free treat and there’s no reason for me not to indulge. Thanks for the recipe.

    This recipe is so interesting! My favorite egg roll filling is veggie. I’ve made them a few times as well. I actually am not a big avocado fan. I know I should be! But, hubby is a HUGE fan of avocados. I know that if I made these, he would be drooling over my shoulder the entire time. Haha! 🙂
