Paleo Avocado Omelette

Happy FriYAY! 

I hate wishing days away but sometimes it is good to breathe in the fact that it is Friday! 

This week I am in the heart of the SNOW! Yes We are suppose to get anywhere from 10-12 inches until tomorrow! Any soup suggestions because I might not be able to dig my way out! 

Today recipe is all about BREAKFAST! I LOVE breakfast! When I was a kid I hated it! When we would eat out in the morning I would honestly ask for french fries as my breakfast. I know so healthy. When college hit though me and breakfast burritos had a serious love affair. Now, I probably would take breakfast in the morning, noon or at night!


 

Avocado and eggs are probably my favorite combination and even a little bit of hot sauce too! I love the fresh taste that the avocado brings to the eggs and how green they taste too! 

Here recently, I have been practicing my omelette making skills. Most of the time they end up in a mess that is not perfectly round or one side is black while the other is brown ever so neatly. However, here in the last few weeks I have been making the most perfect omelettes to the point that I have to pat myself on the back! Thus the Avocado Omelette was born with bacon and tomatoes. 

I can safely say now that I have figured out how to do a magnificent avocado omelette! 

Avocado Omelette 
Avcado Omelette CV

2 -3 eggs (depending on the size, 2 extra large eggs or 3 large eggs) 
1-2 Tbsp of Chopped Red and Green Peppers 
3/4 tsp Granulated Garlic 
1/2 tsp Dehydrated Onion
1/4 tsp Smoke Paprika 
Pinch of salt and Pepper 
1-2 Tbsp Coconut Oil 
1 Avocado 
1/4 cup chopped Tomatoes 
2-3 slices of  cooked bacon crumbled

Heat your coconut oil up in an 8 inch fry pan. Scramble together your eggs, spices, onions and peppers. Once the pan is hot enough pour in your egg mixture. Turn the pan around and get your egg mixture level in the pan. Let it sit on that for about 3 minutes or until the bottom starts to brown a little bit. Flip the egg carefully and let cook on other side for about two minutes. Slice up your avocado and place on top of one side of your omelette and fold the other side over. Put on plate and top with your tomatoes and bacon. Serve with some hot sauce an/ or cheese if you are not paleo!

What an omelette! Am I right? 

Why do I love omelettes so much you ask? 

Well omelettes can essentially do what ever you want! If you want more spice add more spice. You want more avocado; well then add it! You want cheese… you get the picture! I love that the omelette can be what ever you are craving at the time! It can also easily help with what ever diet you are on too! Like this Paleo  avocado omelette recipe here! You don’t have to use the exact ingredients here but this combination is what I use when ever we want to make omelettes in our little house! Minus the fact that my man doesn’t like avocado (BOO!). 

The best part I think I love about this omelette is the avocado! For me an omelette is not complete without one, so I decided to center this breakfast dish around them! Hence the name avocado omelette! Once you get the hand of the omelette ways it is not very hard to do! You just need to make more! That isn’t an entirely bad thing is it?

    On Sunday evenings our family has “Breakfast for Dinner”. This will be on the menu for this week. I love the addition of smoke paprika in this recipe. It sounds delicious!

    I love avocados! And an omelet with salsa, guac, cheese and peppers and onions is my favorite! I need to get better on the omelet making though, I’m pinning this, my omelets taste good but they look a mess, I can’t seem to get the flip down! I make the omelet and Bruce comes up and flips them for me! LOL I’m afraid I’m going to throw it on the floor!!!
