Spring is Here!
Certainly, Spring is coming in with full force sunshine and warmer weather and I couldn’t be happier! With this glorious weather we have been having in the foothills of North Carolina I have been craving fresh foods! In fact, this avocado pico de gallo is all fresh and so ready to have outdoor parties with you this spring and summer!
My family is all about outdoor living. We used to live in Florida where it was all outdoors all year. Well, the summer so dang hot we couldn’t stand it without some form of air conditioning running. Now that we have moved to North Carolina we are outside most of the day in the spring and summer. We turn the A/C on at night to sleep cool, but for the most part it stays off. What is the point of having it on if you are just going to be chilling in the pool with an ice cold beverage of choice? Seriously, this sounds like a dream!

Yes, I have been craving fresh fruits and veggies. It is a serious curse considering that the local farmer’s market doesn’t open until the middle of April, so here I am stuck! Currently I am buying from the grocery store (boo!) but as soon as that farmers’ market open I will be the first in line!
I have been craving fresh fruits and veggies so bad that I just had to make this avocado pico de gallo the other day for dinner because we wanted something different on our salads! It was delicious, I am just saying.
Avocado Pico De Gallo
1 pint of Grape Tomatoes diced and De-seeded
1 -2 Avocados (I used about 2 small ones)
1/2 cup Minced Fresh Onion
1 Jalapeno minced
1 lime or 2 tsp of Lime juice
1 Tbsp Cilantro
Dice your tomatoes then take a fine mesh strainer and wash tomatoes. This will make all the seeds go to the bottom so it is easier to de-seed the tomatoes. Place your tomatoes in a mixing bowl along with your minced onion and jalapeno. Dice your avocado and sprinkle your cilantro over top. Squeeze your lime all over and take a spatula and mix. Serve as a dip, over a bed of lettuce, in a burrito or on top of tacos! It is the perfect treat!

- Put your jalapeno and onion in a chopper or food processor to mince without taking the time to chop them up by hand!
Y’all it was perfect! Literally make the avocado pico de gallo and dig in with a chip. So fresh and so tasty! I am so ready to have pool parties and bomb fires out back this summer! This dip will be a hit during those get togethers too! We love topping our tacos, salads, burritos or just take a tortilla (or any…) chip and shovel it into your mouth. I am perfectly okay with that.
What is your favorite dip to use for summer parties? I am a huge fan of guacamole (obviously) and just about any kind of salsa. I love using this avocado pico de gallo because it has the best of both worlds, salsa and guacamole! I am simply in love with avocados so I try to eat a small one every day because they are so good for you, however, I am not always one to remember to pick them up from the grocery store. Although, I have been making it a point to shop the outside instead of the inside of the grocery store!
