IT’S MY BIRTHDAY!!! Yes I am still kinda young and I will take any excuse there is to have fun and feel young (26 By the way!). I have been looking through pictures today from birthdays past (like 1991 and 1992) and I am realizing that I was quite the cute toddler and I was always excited about it! I was also very obsessed with dalmatians. I mean a dalmatian cake complete with my dalmatian cup and plate oh and I can’t forget the outfit I had, a couture dalmatian dress ensemble complete with pink high heels probably from the designer brand at the local Target (I crack myself up from years ago!)
Yesterday I was canning all day and I literally mean ALL DAY! I still can’t get the smell of pickles out of my apartment! I had about 48 cups of sliced cucumbers to the can. So, trust me when I say I am done with pickles for awhile! At least I know that if I have nothing else this winter there will be pickles there! Also, if you’re on my Christmas list I can guarantee you that these will be in your present! (and probably 2 or 3 other canned products!)
Today’s recipes is quite an easy one! In fact, it is probably my one of my favorite ones for breakfast because I can make several and put them away! I am talking about Breakfast egg rolls! Being creative with them is probably the best part about it too! Adding some guacamole or salsa is extremely tasting or pairing in with some mango salsa is pretty jammin’ too!
Breakfast Egg Rolls
Egg roll wrappers (you can find these in the produce section at most grocery stores)
5 eggs scrambled
1/2 cup shredded cheese (just an estimate)
8 strips of bacon
1-2 Tbsp of Olive Oil
salsa or other dipping sauce
Preheat your oven to 400 degrees
Cook your eggs until they are still kinda soupy (you can dry out the egg rolls if they are all done!). Cook your bacon until it is almost done (I know I shouldn’t use it but I use the already cooked bacon and just don’t put them in the microwave).
Wrap your egg, bacon and cheese in your egg roll. Seal with water and place on a well greased cookie sheet. When you have them all wrapped take a pastry brush and brush olive oil on top of the egg rolls. Bake them for 10 – 12 minutes or until the tops are crispy! Serve with your choice of dipping sauce and your ready to eat!
This Breakfast Egg Roll recipe make about 8 of them depending on how much egg you put inside each one. I put in about 2 good spoonfuls with a slice of bacon and a good sprinkle of cheese! Super duper easy! Oh and extremely easy! I have put guacamole in them or just a couple of slices of avocado with my egg and bacon! Or dipping them in the guacamole is quite nice too!

These look great. I’ve made some similar and they make great football snacks for early morning games…we used maple syrup for dipping and it was awesome.
That would be great too! I love a little bit of hot with my egg but if there is sausage in the picture I love maple syrup with it!
I love a good breakfast burrito, scrambled eggs, sausage and cheese, I use a corn tortilla-gluten free, and then add salsa and sometimes guacamole. Are egg roll wrappers gluten free? I’ll have to check that out, it would be nice to have them all made up! I can eat these for any meal.
Unfortunately egg roll wrappers are not gluten free :-(. I am playing with a recipe to make them. I have also found a couple online that are gluten free but I am hesistant to order offline with something parrishable so we will see!
