Burrito Bowl Stuffed Peppers
I have a serious confession to make.
I LOVE Burrito Bowls! Yes, I know totally crazy! Ignore the fact that half the people my age (mid twenties) are absolutely obsessed with chipotle, Moe’s or Salsarita (my jam!), because let’s be honest burrito bowls are just plain amazing. So when I started making burrito bowl stuffed peppers I just knew I had to share.
The best part is that you can easily make these burrito bowl stuffed peppers at home and they won’t cost you that arm and leg you need. ( I think that is my favorite part about cooking!)
Not only can you make them at home but you can also make Burrito bowl stuffed peppers. Yes, these peppers are full of all the good stuff are just perfect and waiting for you to make them. You won’t be disappointed because well lets face it who doesn’t want burrito bowl stuffed peppers?
I mean I am always craving burrito bowls why not just make the bowl part edible right?
Burrito Bowl Stuffed Peppers 
5-6 medium Bell Peppers
1 lb ground turkey, beef or chicken
2 Tbsp Taco Seasoning
8 oz Mushrooms Sliced and sauteed
1 cup Rice
1 Chicken Broth
1 15 oz jar Salsa
1 15 oz can Black Beans
1 cup Corn
Boil the peppers for about 2-3 minutes when they are still firm to stand up but a little soft. Set aside. Preheat oven to 375 degrees Fahrenheit.
Cook your ground meat down and add in your taco seasoning. Add in the mushrooms (I like to add a tiny bit of garlic with my mushrooms). Add in your rice, beans, corn, salsa and chicken broth. Let simmer until the rice is cooked to tender and the chicken broth is absorbed. Turn off stove and stuff your peppers. I layer my peppers with cheese after ever spoonful… Yes it makes it delicious. Then top with cheese
In a 9 x 11 baking dish ( I place about 1 cup of water in the bottom just to help steam it a little bit). Cover the dish with aluminum foil and bake for 20 minutes. Then take the foil off and bake for another 20 minutes or until the cheese is browned a little bit.
Serve with guacamole, sour cream and cheese on top and chow down! AND DONE! Burrito Bowl stuffed peppers!

I love making these burrito bowl stuffed peppers for company because they are so pretty and serious so good. My mom admits that they are best the next day because the flavors have melded together perfectly. I mean who doesn’t like leftovers?
You can also have crunchy peppers too by just not boiling the peppers beforehand and it will be give a little extra texture. Seriously a great little extra to add every now and again! 🙂
The best part about these burrito bowl stuffed peppers is that the stuffed is a meal in itself. The stuffing is so good with some guacamole and chips. I make just the stuffing a lot when I need a quit meal prep.
