Gluten Free Cashew Butter Balls
Can we talk about delicious foods for just a minute?
Okay, I know we talk about food all the time but what about high protein, high fiber and high in tasting good food? When does that ever happen?
NEVER, I TELL YOU!
SO when I created some awesome cashew butter balls I had to share them with you!
Let’s get what thing straight. I am a huge fan of anything peanut butter. I fact, when I started really hearing about all these other nut butters like cashew butter, almond butter, Nutella (Sent from God himself) and more I was honestly suspicious about all of them. Not anymore though. I didn’t think they would be so deliciously awesome!
These cashew butter balls were designed with all of them in mind and can easily be switched out. They are also delicious when you want a little extra something sweet to pop into your mouth.
Gluten Free Cashew Butter Balls
2/3 cup Nut Butter ( I use Almond or Cashew the Most)
1/3 cup of Ground Flax Seed
2 Tbsp Raw Honey
1 Cup Oats
2 Tbsp + 1 tsp Coconut Oil
1 cup Dark Chocolate Chips mixed with 1 tsp coconut oil (optional)
Mix together your coconut oil and your nut butter together and microwave until melted and mixed well (45 seconds to a minute).
Mix together your nut butter mix, oats, honey (sometimes best if warmed slightly) and flax seed. Roll into 1 inch balls and place on baking sheet covered with parchment paper. Place in fridge for 1 hour.
Mix together coconut oil and chocolate chips and place in the microwave and let melt for 1 minute. Mix until smooth. Take your cashew balls and cover them in chocolate and place back on the baking sheet and refrigerate for 1 hour.
You are ready to eat these delicious, healthy little snacks any time you are ready. Store in the fridge to ensure they don’t fall apart when eaten! Chocolate covered is completely optional!

The Cashew butter balls here were covered both in dark and milk chocolate so it is entirely up to what you and your family like the most! We are a huge fan of milk chocolate here, so I tend to favor that as my chocolate covering of choice and we will sometimes put some sprinkles on top to give them a festive look too!
These little guys are packed full of fiber and are easy to pack in lunches, snacks for car rides, pop them into your mouth straight out of your fridge or for hikes for the upcoming spring season! We enjoy the cashew butter balls without the chocolate on top as well and tend to be less messy if you are going out on a warmer day too.
What is your favorite high fiber snack to enjoy? I have always been partial to granola bars and such but these little cashew butter balls may be the best thing yet to have and eat!
The reason I had these in mind to post the most, especially right now, is because I am seriously dreaming of warmer days. Here in North Carolina Mother nature has been taunting us with 70 degree weather in January and in my paleness glory have broke out the sandals a few times myself! It is going to be so hard for me to wait!
