Hi all! Peanut Brittle

What a week it has been!

I am so thankful that I have made it to Friday this week. Honestly I thought I might crap out and been in bed with how busy I have been.

But I somehow have managed to do cook, clean and run a store all while getting a Christmas tasting Event together. I think I might deserve a little wine after this!

Do you have a Christmas Tradition?

My mom would always bake and give away peanut butter fudge, peanut brittle and iced sugar cookies.I would help with the sugar cookies. I remember I got to decorate them with her after we had cut them and baked them. They weren’t always the prettiest but they were tasted pretty good and that is all that mattered right? Well, for the last few years it has been my duty to do all the tasty treats that we have given in the past! AND, this is the first year that I have changed the recipe on some of them! …

Ginger Snap Granola

How has the first part of the week been for you? It has been a wild ride this week with the store, home and the weather! it has been a rather wet and nasty past few days here in North Carolina and I keep on telling myself that we need it but with this new storm coming on in I am not sure that is the case anymore! I want to see the sun and all the fall colors! 

Anyways, I remember when I was younger (as recently as summer 2014) I used to make ginger snaps with my grandma. Ginger snaps are probably my most favorite cookie in the world! The spiciness of the ginger, clove and cinnamon mixed with a sweetness of sugar and molasses is the perfect thing to snack on! I would have to be careful to not eat too many because I could probably easily eat a whole batch of them and not think twice about it. In fact, those cookies are what I give away the most of at Christmas and they are a huge hit! …

Cinnamon Apple Egg Rolls

Happy Fall Y’all! Apple Cinnamon Egg Rolls CV

Today is officially the first day of Autumn and I don’t think I could be anymore happier! The nights are cooler, there is a crisp to the air and all my fall clothes are relevant again! I am more than excited to have the best season of the year starting even if I am still wearing flip flops! I love how happy it makes people with the weather being awesome and the leaves in the mountains are just perfection! 

With Fall comes apple season! Apples are probably one of the best fruits you can eat! Why you ask? Well because they are pretty stinkin’ good if you ask me! I cannot wait to start canning them too so that we have enough for the whole year too. We have a whole bunch of apple festivals around us in the mountains and I cannot wait for them to come and I will drink my weight in apple slushies! …

Vegan Mini Pumpkin Chocolate Chip Muffins

Hello! Vegan Pumpkin Chocolate Chip Muffins

How is everyone doing today? I can tell you one thing, I am enjoying the cooler weather as much as I can with the windows open until this weekend when it warms back up for a couple of days.

This past weekend I had so much fun for my birthday! We went to Charlotte, NC for the Greek Festival! It was rather cool in the city and that was the main reason we wanted to go! It was so good with yummy food, watching dancers, seeing all the priest garbs in the church and having fun with an old friend from college! It was so nice to catch up and relax outside where it feels amazing! Oh how I wish it would stay mild and in the high 60’s all winter! I am so ready to pull my favorite sweaters out of hiding and put all my maroon on! 

As you can see I have a little bit of an obsession with pumpkin, but it only happens once a year, so in my mind it’s okay. When I was a child my mom loved to make apple anything so I think I have steered away from apples (but I still love apples don’t worry!). It wasn’t until later in life that my mom started making a lot more pumpkin baked goods like pumpkin cookies, which will be up tomorrow on Mattie’s Pantry! …

Gluten Free Cinnamon Sugar Doughnuts

Happy Hump Day! Gluten Free Cinnamon Sugar Donuts

I am just going to say this now: I am not sorry that I am obsessed with fall too early! Being from a place that doesn’t have fall (Florida) I will enjoy every last minute of it! Probably my favorite flavor is cinnamon sugar and I feel like I crave it most around this time of year. So, naturally I was craving this the other night after dinner for a little morsel of something sweet. I decided to get my flour out and start baking right there and these gluten free cinnamon sugar doughnuts were born! 

Now, I know what your thinking these are devilish! You would be right! But the bright side is that they are dairy free and gluten free! I mean that probably cancels out the fact that they are too yummy to not just have one right? Most doughnuts I cannot eat more than one because they are just too filling and sweet but these babies are just so yummy I cannot have just one! I also had to share because I know there are people out there like me who love cake doughnuts.

Paleo Apple Crumble

Happy Weekend Everyone! Paleo Apple Crumble

I hope everyone is having a relaxing weekend or an adventure filled one, which ever you prefer! Saturdays are typically my Fridays because when owning a store you probably should be open on Saturday because it is usually the biggest day of the week! 

Anyways, I have a friend who comes from England by way of Florida (he lives in Florida now but is originally from England), and while he was up visit me here in the beautiful foothills of the North Carolina Mountains, my mom made this amazing dessert! She made this dessert for the first time well over 4 years ago but it is still iconic in our family today. The best thing that I can think of about this beautiful dessert is that it can easily be used with any fruit you want; apples, blackberries, blueberries or even a triple berry delight! 

However, it didn’t dawn on me until just recently that I can actually play with this recipe! I know, I know what am I thinking changing mom’s recipe? Well how am I going to learn? Happy Wednesday! Vegan Applesauce Doughnuts

We are almost to the weekend! This past weekend was a hard one as we had to say goodbye to a loved family member but he is without pain anymore and it was a blessing to know that. Now it is back to the world that is my kitchen and baking up a storm and making yummy creations! 

In the last few days with being in the mountains quite a bit it has made me change into fall colors and a fall mood. With that comes the tastes of fall! Like apples, cinnamon, cardamom, cloves and and everything pumpkin! I love apple festivals and pumpkin patches! I am from Florida originally and we do not have seasons down there. it is cold for about a week then it is sunny and 90 degrees the rest of the year. Gluten Free Pineapple Upside Down Cupcakes

I hope you have had a great week! All I have to say is TGIF! It has been a super long between already planning for Christmas shows for the store! I can’t believe that it is already August let alone thinking about Christmas already! But planning is key! I don’t want summer to end (okay maybe just get a little bit cooler) I was born and raised in the Florida sunshine. I like snow maybe once a year. Then it can go away! 

Today I have a recipe that I have played with for some time now. I think I have it just perfect this time. It is a messy one but the messier the more yummy the product is! This tiny cakes were perfect for an after dinner dessert when you only want a morsel of something! I was quite happy with it and I am not a pineapple person! 

The sugar carmelized perfectly over the cakes and the cake wasn’t dense and was just sweet enough. I don’t like having an overly sweet cake in this because the carmelizing of the pineapple and the sugar makes it sweet enough! These little cakes were so yummy! Pineapple upside down cake is my Dad’s favorite thing to eat and he really liked it so you know it is good then! 

Gluten Free Upside Down Cupcakes: 

2 can of Pineapple chunksor Tidbits (20 ounces and 8 ounces) 

1/3 cup melted butter (or Coconut Oil) 

1/3 cup Coconut Palm Sugar 

1/2 cup Cup Brown Rice Flour 

1/4 cup Tapioca Starch 

1/2 tsp Xanthan Gum 

1/2 tsp Salt 

3/4 cup Coconut Palm Sugar 

1/4 cup Butter Softened (makes it fluffy) 

1/2 cup Pineapple juice (can be from the pineapple cans above)

1 egg

1/2 tsp Vanilla 

preheat oven to 350 degrees Fahrenheit.

Make sure to spray nonstick spray in your muffin tin really well!

Melt your butter or oil and then mix it with your 1/3 cup coconut palm sugar. Then place a scant 2 tsp of the mixture into each well of your muffin tin. If you are short a little bit just mix a little more sugar (tsp) into the rest of the butter.

Place 4-5 chunks or tidbits of pineapple into the bottom of each well.

In a mixing bowl or stand mixer mix together your sugar, butter, juice, egg and vanilla. Then mix in your flour, tapioca starch, xanthan gum, baking powder and salt into the wet mixture.

Divide the batter into the muffin tin equally. bake for about 24 minutes or place a toothpick inside the cake and see if it comes out clean.

Let sit the muffin tin for about 5 minutes after oven and cover a cooling rack with parchment paper. Take a knife and gently go around the sides of the cakes enough to loosen them. Then take the cooling rack and place on top of the muffin tin. Turn pan upside down and the contents will be in the parchment paper when lifted. GFPUDCC

Let them finish cooling completely and then dress them with some whipped cream and a cherry! 

Perfect dessert! They are a bit messy but the messier the better! I would rather use the tidbits because they are smaller bits of pineapple but it is really up to you!

Gluten Free Chocolate Peanut Butter Cupcakes

Hi Everyone! Gluten Free Chocolate Peanut Butter Cupcakes

I have been super busy already thinking about Christmas! I know it is August but for my family store we have to already think about all the Christmas shows that we are so looking forward to! I am also thinking about apples and coming along with that is applesauce and apple butter! So many things to do and so little time! I just counted only 19 more Fridays until Christmas! I am not trying to wish away the time but I do loving spending an abundant amount of time with family! 

Today’s Recipe is all about Chocolate and Peanut Butter! If you haven’t been about to tell it is my favorite combination of sweets! I made these pretty little things for a family birthday party this past weekend. The recipe made 18 standard cupcakes and they are all gone! They were so yummy, moist and peanut buttery! Best combination if you ask me! 

Gluten Free Chocolate Peanut Butter Cupcakes

1 1/2 Cup Brown Rice Flour 

2/3 Cup Tapioca Starch 

1/2 Cup Cocoa Powder 

1 tsp Xanthan Gum

1 tsp baking Soda

1 tsp baking powder

1/2 tsp Himalayan Salt

1/2 cup Coconut Oil Melted 

1 Cup Almond Milk 

1 tsp Vanilla 

1 egg 

1/2 cup Chocolate chips (I only use about 1/3 cup) 

54 peanut butter solids (optional) 

Preheat oven to 350 Degrees Fahrenheit.

Sift together your Brown rice flour, Tapioca Starch, Xanthan Gum and Cocoa powder. (sift 2-3 times) Sifting these gives the cupcake more fluffiness. Then add in your salt, baking powder and baking soda. Set aside

Mix in the bottom of a mixer or mixing bowl your coconut oil, almond milk, vanilla and egg. Once mix add in your IMG_8771dry mix slowly so that it does not go everywhere. 

Fill your baking cupcake cups up about a third of the way and then put 3 peanut butter solids in and finish filling the cups up to about 3/4 full (shown below).That part is completely optional and yes peanut butter chips can be used too. Bake 17-20 minutes depending on placement of the racks in the oven.

Let your Cupcakes cool completely before icing! IMG_8775

1/2 Cup Butter softened 

1 Cup Peanut Butter 

3 Tbsp Almond Milk (or any milk) 

2 Cups Powdered Sugar 

This recipe is only an estimate. If you want it fluffier then add more powder sugar and 1 Tbsp more of milk. I make my buttercream until it is the taste and consistency I want. 

Ice your cupcakes and decorate them how you want! I had some extra peanut butter solids that I used along with some chocolate chips!  They were absolutely amazing! Everyone loved them and raved to me how much they loved them. I was so happy that everyone loved them and couldn’t get enough of them. They even took some home with them (I did not need any of these in the house because I would eat them all in one sitting!). So, I know that if you make these for a family get together or a party for a send off to school for the kids everyone will love it!

Gluten Free Banana Chocolate Chip Muffins

Hey there! Gluten Free Banana Chocolate Chip Muffins

I hope everyone has had quite the relaxing weekend! I know I did with sleeping an extra hour (it makes a world of difference!) and making my own schedule. It was a rather hot and dry weekend though and I probably spent 90% of it inside. It’s not my first choice of doing but even though I am from Florida I do not like the heat! I did take my dogs for a hike on Saturday which was so fun and it got them out of the house! 

Anyways, yesterday on my day off from the store my house smelled like banana bread and chocolate chips throughout! It brought me back to the times I made banana bread with my mom when I was younger (I still do this!) and I had to stand on the stool to reach the counter.
