Gluten Free Pub Chips

What is your go to snack when you are looking for something salty and crunchy? My answer, probably like any other person, would be some potato chips. Not just any chips though, but those amazing, thick cut and super easy pub chips! 

As I have told you in a recent post, Paleo Zucchini Chips, that I jut happened to obtain a mandolin. Not the instrument but a slicing mandolin! I have never been so excited to have one! However, I have been making everything with it! Any form of potatoes, squash, cucumbers or anything slicable. ( not sure if that is a word but I am going with it) And it has turned out to be a tasty one.

I know, I know, I KNOW! Look at them! So cute, so yummy and so pretty too! Whoopie pies have always been a favorite in out house. I can remember when I was 5 years old my mom and I would be making some whoopie pies in her tiny kitchen in Florida. Her kitchenaid was just a stirring, oven making the house warm and me covered in cocoa powder flour. Yeah one of my favorite things was being in the kitchen with my mom. What a weekend it has been! Our refrigerator decided to it didn’t want to work right anymore. Why? Because when everything decides to go wrong it does. Thankfully it ended with the fridge. However, I am not going to jinx it. We also have another fridge downstairs so we were blessed this time! Besides I get to tell you about this awesome gluten free steak stir fry! 

Anyways, I have had to cook a lot of food because of that incident and I had about 1 1/2 pounds of steak that I had no idea what to do with but maybe make food for the dogs… Yeah I though that would a bit of a waste too….

Why is everything bigger always better? In the store if you buy the bigger quantity of something it is always cheaper, more affordable and of course it lasts longer. Or, what about in the bakery the muffins are always bigger than when you actually make them at home. I mean hello, why can I not make them that way? (unless you have a giant muffin tin of course!) My point is that usually bigger is better and these giant chocolate chip cookies filled with chunks of chocolate and yummy goodness are seriously the bomb diggity ( I heart someone say that once so it is definitely a thing!). 

Who doesn’t like giant chocolate chip cookies? Big, chocolaty, sweet, soft and warm (if they are fresh!). All of the things I look for in my perfect relationship; well my relationship with sweets that is. I have always been more of a cookie or bar person with the exception of my mom’s Texas Sheet cake which is to die for! Otherwise, I would rather reach for a cookie or 2 because they are so easy to grab and eat. No hunting for a knife to cut with and fork to eat with. And by Southern I mean it truly is awesome too! Hush puppies are a delicacy of the South and prone to being served with fish and by golly are they amazing! 

I am from Florida originally. You know, the place that is so South it is North? Why? because most of the people that live there today are from Northern states that go to retire and never be cold again! Florida also has some of the best fresh seafood and fish ever! However, everywhere you go it is just different. 

Here in North Carolina they don’t ask you if you want sweet or non iced tea because well everything is sweet. We go to a great seafood restaurant here where I live where everything is either fried or served with something fried and you may not exactly know what it is but it is fried so people eat it anyway….

Chocolate Peanut Butter Granola Bars

Currently sitting here eating one of these scrumptious chocolate peanut butter granola bars as dessert after dinner and thinking, man these are so darn good! 

We always try to have these types of snack around opposed to chips and cookies because us as a family (by family I mean John, my boo, my mom and I) are trying to steer clear of processed foods. SO much harder than it looks trust me! Especially when you want those french fries so bad but it will probably take you a century to make them because your left handed and everything just takes longer. I have put a lot of thought into this! 

Regardless though these are my obsession and i would prefer these over french fries any day. Unless I get myself a spiralizer and make those amazing curly fries that I saw on Facebook a little while ago. Then it would be some massive competition but right now in my after dinner bliss I am totally in heaven with these chocolate peanut butter granola bars chilling, half eating, on my little round saucer as my dog stares hopelessly trying to thinks of way to look cuter so she may get some….

Gluten Free Banana Streusel Muffins

Bananas for these banana streusel muffins! Yes I am! Corny? Yeah, probably, but I am serious though! I have had one of these for breakfast everyday since I made them this last time. Pretty darn good if I do say so myself. 

A few weeks back my mom asked me what I wanted her to do with these overripe bananas. So, like any baker I told her to freeze them and I would find something to do with them. A couple days later I was planning posts for my amazing audience and I had this bright idea: How about banana muffins? YES! And these banana streusel muffins were born. 

I must say I am rather proud of myself about using things out of the freezer because I am just like everyone else when it comes to remembering that they are in there. I don’t then they are freezer burnt and I have to throw them away. Happens quite often, but I am getting better at it!! …

Easily the best food combination. Right up there with peanut butter and banana, and cereal and milk (serious try a PB and banana sandwich!). So it is naturally fitting that these garlic parmesan crackers would make it to my little cut of the internet!

Garlic and Parmesan is seriously a combination that just about anyone enjoys! From spaghetti, pizza, garlic bread with cheese on top and of course the ever popular chicken parmesan it is something that just makes us think of big amazing dinners that you leave feeling so super satisfied and so sleepy afterwards. Your salads will never be the same after you make this amazing oriental ginger dressing! It tastes very similar to the dressing a top the ever famous oriental chicken salad from Applebees that I am constantly craving!  However, this one is not bottled and shipped all across the united states and is fresher too!

How many of you crave salads? I think I crave salads mainly because of the dressing. I have always loved having a salad especially if it has ranch anything on top. My favorite dip was ranch, my favorite dressing was ranch and if there was a flavor of ranch on chicken I am pretty sure I would love it. Then I became slightly lactose intolerant. Slightly mean I could still eat it but if I had one teaspoon too much my stomach would certainly let me know about it….
