Am I the only one who wishes that the weekend was 5 days long while the week was only 2 days? 

As you all know I have been exercising everyday. I am not talking Crossfit or p90x but you 15 minutes of core workout and about 30 minutes of fast pace walking. Can I tell you how much energy have during the day? I love it! I also have been sleeping so much better at night and making sure that I eat breakfast! I have been perfecting my omelette game and that should be on the blog later in the week! Not just the usual bacon cheese and egg either! You will have to come back and see what it is all about! 

This past week it has been difficult making thetime to sit down and eat with each other because we have had one thing after another. My man loves refereeing so at night he has been reffing at a local community gym all of the basketballs games from 6:30 to 8:30 various nights of the week. Between that and the church starting a fun Bethlehem Alive for the Christmas season to come! It has been a busy time and it looks like this year isn’t slowing down, but it is fun though. Oh anyways! My point was I have been trying to make these burgers for about 3 or 4 days and ever day we have been too tired to make them until one night I decided tonight is the night.

They are always a fantastic winner for dinner!…

We have made it through another week!

Less than a week from Thanksgiving!

Did I mention it was FRIDAY?!?

I am not even going to lie to you Friday is my favorite day of the week! Besides Sunday of course, because it is nap day.

Thanksgiving is about being thankful for everything in your life, which I know I am thankful all year for my family and the people close to me who just made my journey through life that much better! I can’t believe that it is already Thanksgiving in 2015! I feel like this year has gone by so fast I think I am still back in about April in my mind! I am don’t think everyone is totally ready for the Christmas season but I love the spirit that everyone seems to carry with them this time of year….

I can feel the seasons slowly starting to change. Here in North Carolina we have had a rather warm fall and now it is starting to get cool and rainy (again!). I think at one point we didn’t see the sun but twice in a 3 week period. Gotta love the cold rainy days where you don’t feel like getting up out of bed for anything… Those are my least favorite days. Pear Applesauce

I hope everyone has had a great start to your week! I sure have between making Christmas gifts, which consists of cooking and canning apples and pears to share with everyone! I am so glad that this year I am experienced enough in canning to be able to give out jars of my amazing jams and jellies this year! I have only been canning for about a year now, so I am quite excited to save money and give such amazing gifts too! 

Today’s recipe is one that my mom and I have recently been experimenting with. Earlier in the fall we were given Asian pears in our CSA box along with apples. The apples were good but there wasn’t enough for us to make applesauce with… so we decided to throw the pears in there to see what would happen. Literally Awesome! I don’t think I could have had an applesauce that was any better! I was really surprised because pears are not my favorite fruit. I think it has to do with the texture but I just am not a fan of pears. However, in this beautiful pear applesauce they are masked well with the apples and the spices that I cannot even taste them! …

I feel like it has been a long while since I last wrote even though it was only just 2 days ago! It has surely been quite the week back after vacation. From booking Holiday shows to our own food tasting here at Mattie’s Pantry it has been quite a busy week! However, it is never fun without a little bit of busy-ness. However, Tonight is the Carolina Balloon Festival and I am more than ready for a nice relaxing night before I start back up to being busy again tomorrow! 

The Carolina Balloon Festival is a family friendly even that happens every October here in the foothills of North Carolina and it is a Hot air Balloon Festival. They have everything from craft beer and wine tastings to blowup activities for kids! The first October I lived here in North Carolina we went and I loved it! We have been back ever since! It is such a beautiful event and it is very low cost to go too! …

This week sure has seen its fair share of excitement! If you are following me on Instagram you would have found out that I will now be doing the weekly recipe for our local paper here in Hickory, NC!!! I was so excited when I got the news about a week ago! I have been doing flips in my head every since it was published on Wednesday! So if you by chance live near Hickory, NC grab a paper every Wednesday to get some delicious recipes! 

The last couples of days have been rather raining but it is more than welcomed after the dry spell we have had! It is turning to fall rapidly and I need to be in the mountains! I went to school in the mountains and there is nothing like Fall in Western NC. The colors are absolutely amazing and I saw a picture on Facebook earlier this morning about how peak color will be coming up pretty quick! It takes it a little longer down here in the foothills but still there is nothing like it! If you can ever get on the Parkway at the beginning of October ever it is just beautiful and breath-taking! …

Okay,so maybe tomorrow is actually my Friday (Saturday), but hey I am always excited for something! 

As many of you probably already know I own a little store called Mattie’s Pantry here in Hickory, NC. We pride ourselves mostly in the freshness of our spices and we have recently opened an online store too! I am getting to the point I promise! Anyways,  I wrote a recipe for Mattie’s Pantry (Website here) where I made a gluten free zucchini pizza crust (Recipe here) that was out of this world amazing! It was quite a success on there! 

SO, one day I was thinking… what do paleo dieters eat when they want a wrap or a taco of some kind? Lettuce? I felt like that could get kinda old… so I dreamt of these beauties! These paleo zucchini tortillas are amazing! I don’t know about you but I am all about options here and these paleo zucchini tortillas definitely give you options! Even if you aren’t a paleo dieter these paleo zucchini tortillas are so much fun and super yummy too! They are easy to dress up as soft tacos for dinner or have a breakfast burrito in the morning!…

Paleo Apple Crumble

Happy Weekend Everyone! Paleo Apple Crumble

I hope everyone is having a relaxing weekend or an adventure filled one, which ever you prefer! Saturdays are typically my Fridays because when owning a store you probably should be open on Saturday because it is usually the biggest day of the week! 

Anyways, I have a friend who comes from England by way of Florida (he lives in Florida now but is originally from England), and while he was up visit me here in the beautiful foothills of the North Carolina Mountains, my mom made this amazing dessert! She made this dessert for the first time well over 4 years ago but it is still iconic in our family today. The best thing that I can think of about this beautiful dessert is that it can easily be used with any fruit you want; apples, blackberries, blueberries or even a triple berry delight! 

However, it didn’t dawn on me until just recently that I can actually play with this recipe! I know, I know what am I thinking changing mom’s recipe? Well how am I going to learn? So I played and I realized I could potentially make it to be gluten free, vegan, paleo or well all of the above! So I did it! I knew I had to share this recipe! …

Howdy Everyone! 

It has been quite the week. I feel like for the last couple of weekends I have been on the move. Pinehurst and then Lancaster, PA this past weekend. I need some time to cool down! We went to a food show for our store and it was so much fun to meet so many new people and see new products and what a lot of these companies are doing to become Non-GMO and organic. What I love is that these companies are really trying to make their foods better and healthier for everyone. 

Anyways, to what you actually came for the cupcakes! These cupcakes are awesome! You got the best of both worlds in these cupcakes and the best part is that they are gluten free! The first time I baked them though I made a huge mess. I had to learn from that experience then decided to get double sided piping bags. They worked wonders and the cup cake mixes blended well together!

Last week I was in Pinehurst, NC and this weekend I will be in Lebanon, PA (My roots) for a food show for our family business.
