Gluten Free Pub Chips

What is your go to snack when you are looking for something salty and crunchy? My answer, probably like any other person, would be some potato chips. Not just any chips though, but those amazing, thick cut and super easy pub chips! 

As I have told you in a recent post, Paleo Zucchini Chips, that I jut happened to obtain a mandolin. Not the instrument but a slicing mandolin! I have never been so excited to have one! However, I have been making everything with it! Any form of potatoes, squash, cucumbers or anything slicable. ( not sure if that is a word but I am going with it) And it has turned out to be a tasty one.

Are you a lover of avocados? Well you are among a great friends here as avocado is my most favorite fruit that doesn’t go into a fruit salad ever! Yes, I had to say it. I only wish I could grow an avocado tree in my backyard, but since there is snow on the ground here yearly (about 5 inches) they will not thrive and house avocado trees do not bare fruit. I guess I will just have to move somewhere more tropical, darn… haha!  …

Paleo Avocado Deviled Eggs

Are you a person who is excited to go to a party and the first thing you pick up is a deviled egg. In fact, you could probably just eat deviled eggs for dinner or lunch and be just fine.

No? Just me? I certainly hope not!

Well if you are that person than I will be right next to you splitting the plate as everyone else looks on. I am perfectly okay with that. However, when I eat them I can feel myself gaining the weight and I thought to myself I need to make it just a tiny bit healthier for those of us that are okay with eating a plate full. Trust me you will not be disappointed in these avocado deviled eggs.

Another thing I love is avocado. I feel as though I could add it to just about anything and it will magically make it taste amazing. Probably not everything but I would eat it on just about everything. So my mind went crazy the other day when I thought about making these gorgeous little avocado deviled eggs. I probably could eat a tub of the filling and forget about egg white. Probably… no, I definitely could.

6 hard boiled eggs
1 Haas Avocado
3 Tbsp Paleo Mayo (recipe can be found here)
1 tsp Smoked Paprika Divided
1/2 tsp No Salt seasoning (like Mrs. Dash)
Pinch of ground mustard
1 tsp of Olive oil
1/2 tsp Lime juice

Slice eggs in half and place the yellow parts into a food processor and set egg whites aside. Wash and scoop avocado out of skin and place in processor. Add in your mayo, lime juice, olive oil and spices (1/2 tsp of paprika) and process until smooth. Take a ziploc bag or an icing bag. Take a spatula and spoon into bag. Snip corner and squeeze into your egg white. Sprinkle paprika on top and serve!

I could eat on these avocado deviled eggs all day!

This particular recipe is paleo but you can use regular old mayo instead if that is what you have on hand. The avocado adds an earthy flavor to the eggs as well as giving them a creamier filling. The olive oil just keeps the filling fluid so that it stays more together instead of drying up. The lime juice keeps the avocado from spoiling too quickly and they will last longer. They will keep up to 2 days in the fridge (FYI they do not last that long in my house… :-))

What a week it has been with snow melting or in someone else’s case maybe even more SNOW!

With a certain football game coming up (GO PANTHERS!) on us quick (it is already 2016 people!!) I felt the need to share with you all my favorite, and I mean FAVORITE, dip to have for any game day. Why you ask? Because it is so EASY! Taco Dip! Can easily be used for chips, veggies or it can literally go inside tacos too! We have used it with our tacos before and it is might tasty! With so much taste, this taco dip is anything but traditional!

I first learned how to make this taco dip when the Buccaneers were last in the Superbowl and it was from one of my Friend’s Mom. (I lived in Florida at the time) I was in seventh grade and more interested in making the food than the football! This past week a local school, Hickory Christian Academy, held their annual Christmas Show and Mattie’s packed up a few goodies and took them. We had so much fun talking to so many of our customers and meeting new ones as well. We were quite busy the whole day even at the store too. It was just so much fun. I love doing shows like that where everyone is in such a good mood and buying unique gifts for their family and friends. It is always fun to help pick it out too!

I hope everyone has had a great start to your week! I sure have between making Christmas gifts, which consists of cooking and canning apples and pears to share with everyone! I am so glad that this year I am experienced enough in canning to be able to give out jars of my amazing jams and jellies this year! I have only been canning for about a year now, so I am quite excited to save money and give such amazing gifts too! 

Today’s recipe is one that my mom and I have recently been experimenting with. Earlier in the fall we were given Asian pears in our CSA box along with apples. The apples were good but there wasn’t enough for us to make applesauce with… so we decided to throw the pears in there to see what would happen. Literally Awesome! I don’t think I could have had an applesauce that was any better! I was really surprised because pears are not my favorite fruit. I think it has to do with the texture but I just am not a fan of pears. However, in this beautiful pear applesauce they are masked well with the apples and the spices that I cannot even taste them! …

I feel like it has been a long while since I last wrote even though it was only just 2 days ago! It has surely been quite the week back after vacation. From booking Holiday shows to our own food tasting here at Mattie’s Pantry it has been quite a busy week! However, it is never fun without a little bit of busy-ness. However, Tonight is the Carolina Balloon Festival and I am more than ready for a nice relaxing night before I start back up to being busy again tomorrow! 

The Carolina Balloon Festival is a family friendly even that happens every October here in the foothills of North Carolina and it is a Hot air Balloon Festival. They have everything from craft beer and wine tastings to blowup activities for kids! The first October I lived here in North Carolina we went and I loved it! We have been back ever since! It is such a beautiful event and it is very low cost to go too! …

How has the first part of the week been for you? It has been a wild ride this week with the store, home and the weather! it has been a rather wet and nasty past few days here in North Carolina and I keep on telling myself that we need it but with this new storm coming on in I am not sure that is the case anymore! I want to see the sun and all the fall colors! 

Anyways, I remember when I was younger (as recently as summer 2014) I used to make ginger snaps with my grandma. Ginger snaps are probably my most favorite cookie in the world! The spiciness of the ginger, clove and cinnamon mixed with a sweetness of sugar and molasses is the perfect thing to snack on! I would have to be careful to not eat too many because I could probably easily eat a whole batch of them and not think twice about it. In fact, those cookies are what I give away the most of at Christmas and they are a huge hit! …
