Can you believe that it is almost Thanksgiving? It has really become fall here in the foothills of North Carolina and I have the heat on! Yes, I do! I am a fair weather girl and as soon as I see 50 degrees get the long johns out, scarves, boots and everything that comes a long with it! I really don’t know how I survived up on the mountain where it snowed a fair bit every winter and I didn’t see the sun for months at a time. I did have the best time though!
As you can tell I hate being cold! I will put layers upon layers on myself to keep me from being cold, but today’s recipe will make you feel exceptionally warm this time of year!
My favorite flavors this time of year are often cardamom, cinnamon, cloves, ginger and of course sugar. However, what better way than to have chai tea then right? however, my problem is I like to chew (habit!) and I would sometimes much prefer food to a drink (Foodie at heart!). Chai oatmeal is my kinda of breakfast especially when it contains all of my favorite flavors and it is warm, which is the best part of all.
2 Cups Rolled Oats
4 Cups Almond Milk (you can use regular milk too or a combination of a milk and water)
1/2 cup Coconut Palm Sugar
2 tsp Cinnamon
1 tsp Ginger
1/8 tsp Cardamom
1/8 tsp Cloves
Add your rolled oats and milk to a sauce pan. Over medium heat let the rolled oats and milk boil until the rolled oats have gotten tender and have soaked up much of the milk. Add in your sugar and spices and continue to cook until it is at a oatmeal consistency (a little lumpy yet pourable). Serve hot with some cinnamon sugar on top.
I love to add apples to my oatmeal and this one is no different! You can eat it plain or add your apples in at the last minute so that they are still crisp and tender yet warm and yummy still! I love making the chai oatmeal Saturday mornings while pinning or watching TV or netflix (in bed of course). it is just the perfect breakfast to have on cold mornings when I know I don’t want to get out bed too! It gives you a good jump start to the day and is full of fiber to keep you full during the morning hours! My 2 best friends are coming in to visit me in a couple of weeks and this will be a great breakfast to chat over in the morning!
