Chili Cilantro and Lime Chicken
You love spicy foods, in fact, so much so that your tongue’s taste buds can’t not taste anything without your food being drenched in hot sauce! Dramatic? Yes, maybe.
BUT…
I can totally agree with you! I love taste! I might not agree in the sense that I need everything drenched in hot sauce but I can hang with a little bit jalapeno instead of habenero. As if grading by hot peppers is a thing… In my world it is… 😀
This Chili Cilantro and lime chicken is AHHH-MAZING! So much so that we probably eat it for dinner 2 to 3 times a month. Do you have a recipe like that where you eat it quite a bit. Our’s is definitely between this and spagheti just because of the easy factor and it can make a whole heck of a lot! I could probably eat pasta (gluten free or not!) everyday and not get sick of it, but that is for another time to talk about!

Chili Cilantro and Lime Chicken
roughly 3 lbs of chicken tenderloins (my were cut up chicken breasts)
1 cup olive oil
1/4 cup cilantro
1 tsp Ground Chili (roughly)
1 tsp of Roasted Granulated Garlic (or about 3 cloves chopped)
2 Tbsp Fresh Lime Juice
salt and pepper to taste
2 cups Chicken Broth
Mix your olive oil, spices and lime juice together and place your chicken into a baggy. Pour your marinade over the chicken and place in the fridge. I did it all day but a minimum of 45 minutes is perfect.
I used my cast iron skillet so I warmed my pan in the oven first, but if you are using a regular pan just place over burner. When pan is hot enough take chicken out of bag and place in pan. Let cook until each side gets a golden brown color. Pour in the rest of your marinade and pour in your 2 cups of chicken broth. Let simmer in juices for about 5 minutes. I did mine in the oven on a low temperature with my iron skillet. Serve over a bed of rice and pour your juice over top for an even tastier meal!
Can I tell you how amazing this chili cilantro and lime chicken is? I know I have been telling you that but I just have to brag about it a little bit. It has a tiny kick to it, however, if you do want a little more you can add a pinch of ground chipotle to give it an extra umph. When I am in the daring mood I will add a fresh chopped jalapeno to the marinade. It gives it the extra something I am always looking for!
