Sweet and Spicy Chipotle Cranberry Granola
Do you love sweet? Or maybe you are a huge fan of some spice? Regardless, this granola will tickle your taste buds to the point where you can almost satisfy both of those cravings in one beautiful snack, chipotle cranberry granola!
I am not even going to lie when I tell you I was skeptical the first time I created the recipe for this chipotle cranberry granola. I was truly terrified. I kept on thinking to myself, no one will like this, no one will be able to taste anything, there is too much spice, or maybe there isn’t enough! I know dreadful to say the least, but my food is one of the ways I show love so when someone tells me my food sucks (hasn’t happened since I was in middle school, thank you) it hits me right in the heart!
However, after the first couple of times I got this perfect (well my definition of perfect…) and it tasted magnificent! Wonderful! and umm… Scrumptious! Yes, I could probably think of more but I will leave it at that. What I am trying to say that this chipotle cranberry granola is out of this world amazing!
3 cups Old fashioned Rolled Oats (#5)
1 cup Silvered Almonds (or nut of your choice)
1/2 cup Melted Coconut oil Plus 1 tsp for cranberries
1 cup dried Cranberries
4 Tbsp Coconut Palm Sugar
1 tsp ground Chipotle Powder Plus pinch for cranberries
scant 1/4 tsp Cayenne (do this to your liking) minimal for cranberries
Preheat oven to 325 degrees
Mix together your spices, oats and nuts into a bowl. Pour your coconut oil over your oat mixture and spread out evenly onto a baking tray with parchment paper. Bake for about 40 minutes(or until mixture is browned) stirring every 10 minutes. While oat mixture is baking Mix together the remaining coconut oil and spices with your cranberries. When oats are done baking mix in the cranberries and let cool completely.
Serve over yogurt, as a snack or just about how ever you would normally serve granola. It is a great snack to take on the road with you, outside with the family or just to have for snacking!
The sweetness the coconut palm sugar is the first player in the taste. it gives you the original taste of an oatmeal granola and just when you are not expecting it the kick of the cayenne comes at you! It’s subtle, but it lasts. It is isn’t a huge bit, instead more of a nibble and that cayenne just makes the combination of sweet and spicy irresistible!
In fact, one of the first times I was making this I tried it before I put the chipotle cranberry granola into the oven and I muttered to myself that I may have to add more cayenne! Then that spice crept up quick and then WHAM! Nope no more cayenne. If you simply add it to yogurt (which it is great in) it will silence some of the cayenne so that you do not taste it as much.
The Chipotle does give it some added heat but it gives the granola a very subtle smoky flavor. The smell when cooking the granola makes you want to make some amazing wings or chicken or something. It is seriously delicious! I am truly a lover of anything that is sweet and spicy, but not too spicy…
