Chocolate Peanut Butter Granola Bars

Currently sitting here eating one of these scrumptious chocolate peanut butter granola bars as dessert after dinner and thinking, man these are so darn good! 

We always try to have these types of snack around opposed to chips and cookies because us as a family (by family I mean John, my boo, my mom and I) are trying to steer clear of processed foods. SO much harder than it looks trust me! Especially when you want those french fries so bad but it will probably take you a century to make them because your left handed and everything just takes longer. I have put a lot of thought into this! 

Regardless though these are my obsession and i would prefer these over french fries any day. Unless I get myself a spiralizer and make those amazing curly fries that I saw on Facebook a little while ago. Then it would be some massive competition but right now in my after dinner bliss I am totally in heaven with these chocolate peanut butter granola bars chilling, half eating, on my little round saucer as my dog stares hopelessly trying to thinks of way to look cuter so she may get some.


My secret? I am not sharing! 🙂 

Chocolate Peanut Butter Granola Bars Chocolate peanut butter granola bars 4

3 cups of Rolled Oats (certified gluten free if gluten free!) 
3/4 cup Slivered Almonds (or any kind of nut really) 
1 tsp Cinnamon 
3/4 cup Dark Chocolate chips (optional but so good!) 
6 Tbsp Honey 
4 -5 Tbsp melted Coconut oil 
1 tsp Vanilla 
2 Tbsp Coconut Palm Sugar
2 Tbsp Flax seed 

Topping 
1/2 cup Chocolate Chips 
1/2 cup Peanut Butter (or another nut butter) 

Preheat oven to 350 degrees. 

Spread oats and almonds in to a baking sheet and toast for 15 minutes stirring half way through. Then let them cool completely. Add in cinnamon, flax seed and sugar and stir. Then add in your coconut oil, honey and vanilla. Be sure to only add in 4 Tbsp Coconut oil and stir. If it is sticking together nicely you do not need the extra Tbsp. Take an 8×8 pan and line with parchment paper (aluminum foil will work just spray with nonstick spray well) and press granola mixture into pan. Place in fridge. Proceed to melt chocolate chips and peanut butter in the microwave in 30 second intervals and stirring every 30 seconds too. Spread evenly on to the granola mixture and place back in fridge for at least an hour. then take out and cut into 16 strips and wrap in saran wrap. Store in fridge to keep the chocolate hard however, if your house is cooler than in a sealed container is great. 

chocolate peanut butter granola bars 1We love eating these chocolate peanut butter granola bars for breakfast because they are so filling and they keep us going longer.  So much chocolate and peanut butter can even be the best dessert. Who says your can’t have your dessert at breakfast ;-). Granola bars are probably one of my favorite snacks to eat simply because they are so easy to grab and go in the mornings or sneak into bed as a midnight snack before shutting the light off (My biggest weakness!). Especially when these chocolate peanut butter granola bars are within arms reach and they are so tasty!

    Hi Gabby,these do sound good. I’m always on the look out for energy bar recipes and will be trying these as long as I can use a substitute for the coconut palm sugar as I am pretty sure we can’t get that here. It’s only in the last couple of years that we’ve been able to get coconut oil!

    I do enjoy homemade energy bars, but tend to over eat them, so my healthy snack of choice at the moment is dried mango (not the sugary type, but the manky brown looking stuff that tastes so much better than it looks), I also enjoy chili nuts.

    Spiralizers do look good, but I just don’t have room in the kitchen and what goes in the cupboard stays in the cupboard (if you know what I mean?).

    I used to make the dogs peanut butter treats, which they loved. You could always fool your dog into thinking it’s eating human food!

      So True Deb! Yes, you can substitute for regular sugar. Better yet if you can find demerara sugar (unrefined sugar) that is just as good. I have unrefined sugar free in my house for nearly a year. We just try to not consume it since it is bleached. However, we work with what we got! It is available at on amazon but make sure you are getting coconut palm sugar and not coconut sugar! 🙂

    I am a huge peanut butter and chocolate fan! So HUGE! My favorite combination. And I just bought a bag of gluten free oats yesterday, intending to make some baked oatmeal bars, but I think this might trump that!!! How fortunate! LOL

    These sound so delicious, but I will have to make then using another nut butter, my daughter has a peanut allergy, but i’m sure it will be just as delicious.

    These granola bars are not cooked? The only toasting is for the oats and almonds?
