I feel like it has been a long while since I last wrote even though it was only just 2 days ago! It has surely been quite the week back after vacation. From booking Holiday shows to our own food tasting here at Mattie’s Pantry it has been quite a busy week! However, it is never fun without a little bit of busy-ness. However, Tonight is the Carolina Balloon Festival and I am more than ready for a nice relaxing night before I start back up to being busy again tomorrow!
The Carolina Balloon Festival is a family friendly even that happens every October here in the foothills of North Carolina and it is a Hot air Balloon Festival. They have everything from craft beer and wine tastings to blowup activities for kids! The first October I lived here in North Carolina we went and I loved it! We have been back ever since! It is such a beautiful event and it is very low cost to go too!
Today’s recipe is a favorite among many people around this time of year, candied nuts. However, these are not just any candied nuts, no, they are ginger cinnamon nuts candied with molasses and coconut oil. How can you beat that? Natural sugars yet they still taste like Christmas and they are no where near as greasy as those fair nuts (however, those are pretty amazing too!)
Ginger Cinnamon Nuts:
2 cups Pecans
2 cups Almonds
1/4 cup Organic Coconut Palm Sugar
4 Tbsp (or 1/4 cup) Coconut Oil (melted)
2 1/2 Tbsp Molasses
1 1/2 tsp Cinnamon (ground)
1 tsp Ginger (ground)
1/4 tsp Cloves (ground)
1 tsp Cinnamon mixed with 2 Tbsp Coconut Palm Sugar (for Topping)
Preheat oven to 250 degrees Fahrenheit.
Mix together your nuts and add in your coconut oil and molasses Mix together well and then add in the spices and mix well.
Line a cookie pan with aluminum foil and spray lightly with nonstick spray (just in case). In one layer (or as best as you can) lay the nuts down onto the pan and flatten with spatula. Bake for about 55 minutes and stir every 15 minutes (the last 10 minutes may have to be 5 minutes, but i did not have this problem). Sprinkle your cinnamon sugar mixture on top of the nuts and mix and let cool on pan for about 10 to 15 minutes (after stirring). serve as a snack or make as gifts in cute mason jars!

The ginger cinnamon nuts have been so yummy and everyone that has had them have loved them! Someone made the comment that it tastes like “Christmas in my mouth!” Yep, I would have to agree! Makes for a perfect snack when your in a hurry or a quick protein packed breakfast! I cannot wait to make these again and gift them this Christmas along with the pumpkin butter, apple butter and jam! Everything Homemade!
