Gluten Free Cinnamon Sugar Doughnuts

Happy Hump Day! Gluten Free Cinnamon Sugar Donuts

I am just going to say this now: I am not sorry that I am obsessed with fall too early! Being from a place that doesn’t have fall (Florida) I will enjoy every last minute of it! Probably my favorite flavor is cinnamon sugar and I feel like I crave it most around this time of year. So, naturally I was craving this the other night after dinner for a little morsel of something sweet. I decided to get my flour out and start baking right there and these gluten free cinnamon sugar doughnuts were born! 

Now, I know what your thinking these are devilish! You would be right! But the bright side is that they are dairy free and gluten free! I mean that probably cancels out the fact that they are too yummy to not just have one right? Most doughnuts I cannot eat more than one because they are just too filling and sweet but these babies are just so yummy I cannot have just one! I also had to share because I know there are people out there like me who love cake doughnuts.

Now that I have my craving under control I can share them with you! 

Gluten Free Cinnamon Sugar Doughnuts: 
1/2 cup Brown Rice Flour 
1/4 cup Tapioca Starch 
1/2 tsp Xanthan Gum 
1 tsp Baking Powder 
Pinch of Himalayan Salt 
1/4 heaping cup Coconut Palm Sugar (Heaping cup = 1/4 cup plus 2 Tbsp) 
1/4 cup + 2 Tbsp Buttermilk (I used Almond Milk soured with 1/4 tsp Lemon juice but you can do this with any milk) 
1/4 cup Coconut Oil (not melted) 
1 egg 


Cinnamon Sugar Topping: 
2 Tbsp Coconut Palm Sugar 
1 tsp Cinnamon
2 Tbsp Melted Coconut Oil 

Preheat your oven to 425 degrees.

Sift you brown rice flour, tapioca starch and xanthan gum. Then add in your baking powder and Himalayan salt. Put to the side.

mix your sugar, buttermilk, coconut oil and egg in the bottom of a mixer. Immediately mix in your flour mixture or else your coconut oil will get too hard.

Spoon into a well greased doughnut pan and spoon evenly into the pan. Make sure that your tops are as even as possible so that the tops come out evenly on top! Bake for 8-10 minutes. Let cool in the pan for about 10 minutes.

Let your doughnuts cool until almost completely cool. Melt your coconut oil and mix together your sugar and cinnamon. Dip the tops of them into the oil and then into the sugar mix. Let them dry and then enjoy! 

They are amazing warmed up in the microwave for about 10 seconds! Pour a tall glass of milk or with your coffee! GFCSDHave i got your mouth salivating yet? Good because I think everyone deserves these yummy delicious doughnuts! I even mixed up a little powdered sugar and milk for a little icing dip! That is if you can hold on long enough without taking a bite of one. 

You can easily substitute the coconut oil with butter. I tried to make them as healthy as I could! And yes they are fairly healthy compared to what they could be!

    My best friend’s son was just diagnosed with celiac disease. She loves to bake and has been frantically trying to adapt her recipes to gluten free, so her son doesn’t feel like he is missing out on his favorite fall treats. I will be forwarding this recipe to her and will be getting one of those doughnut pans for her as well. Thanks for sharing.
