When I was a kid growing up in Venice, FL my mom would take me to a little orange grove called Nokomis Groves. They had an ice cream stand there that sold orange cream ice cream. I would do a swirl with orange and vanilla ice cream and it was called orange creamsicle cone. It was probably the best thing to have after a long hot day at the beach or at school! I loved growing up there and having sun all year long!
I have always loved orange creamsicle and have wanted to recreate it. I picked up some orange slices at our store the other day. i really had no idea what I was going to do with them. I love to eat them but I cannot eat more than 1 at a time because they are sweet! So I started brainstorming and this post was born! This cupcake reminds me of my childhood when we would go the orange grove and get ice cream!
Gluten Free Orange Creamsicle Cupcakes:
12 Orange Slices (gummies)
3/4 cup Brown Rice Flour
1/3 cup plus 3 Tbsp of Tapioca Flour
2/3 tsp Xanthan Gum
1 1/4 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Himalayan Salt
3/4 cup Demerara Sugar (any sugar you want really)
1 1/2 tsp Orange Extract
1/2 cup Coconut Oil
1/2 cup Buttermilk (I used 1/2 cup almond milk mixed with 1/2 tsp Lemon Juice, you can do this with any milk)
Preheat oven to 350 degrees Fahrenheit.
Put your Orange slices into the freezer on a metal tray with parchment paper for at least 2 hours.
Mix together brown rice flour and all of your tapioca flour (1/3 cup and 3 Tbsp) together with xanthan gum. Sift them a couple of times. The more you sift them the lighter your cupcakes will be. Put your baking powder, baking soda salt together with your flour mixture and set aside.
Mix together your eggs, sugar, buttermilk, coconut oil and orange extract together in a mixer. Blend together and then add your flour mixture and combine well.
Take some Tapioca flour and coat your orange slices in it.
Fill your cups in your cupcake tin about 1/3 of the way. Place your orange slice on top of that and fill the rest of the cup. it should be about 3/4 of the way full.
Bake for about 20 minutes or until a toothpick comes out clean.
Let cool completely and make a buttercream icing (I used 2 sticks of butter, 4 cups of powdered sugar, 2 tsp orange extract and 2 Tbsp milk). I also colored the icing orange as well! Ice them how you please! Serve with a nice glass of milk.
These are probably the best cupcakes i have ever made hands down! Full of summer colors and tastes I was so excited to try these as they were baking. The smell filled the house and I couldn’t wait! This was also true while making the icing as well. I couldn’t help but eat some of it while I was making it! It is the perfect amount of those gummies and cupcake!
This dessert is perfect for summer birthdays, parties, get togethers or even just to have for the kids after a long day of being outside! I cannot wait to share these cupcakes with my mom because she was the one to take me to that little ice cream stand and get those amazing cones! I also cannot wait to hear what you all have to say after you make these! I know everyone will love them!!
