Gluten Free S’mores Granola Bars

Over the last week I have been traveling! Yes traveling! I know I feel like I don’t get out much but I swear I will be sharing with you the places I have been next week! It was such a great trip to just get out of town that it needs a post to talk about. 

Anyways… 

Right before our trip I decided that we needed some fun and festive snacks for the road. Something that fun, filling, low in carbs (okay not completely low), some what healthy and super yummy too! So naturally these s’mores granola bars were born! 

The s’mores granola bars will have everyone running for them especially since they have those fun rainbow marshmallows tucked into them! They make it super fun however, they by far are not necessary to enjoy. To answer your question, no I did not go rummaging through boxes upon boxes of cereal to obtain them either. That would just be crazy! (though not uncommon) They are also fun to add to your favorite cereal to add more color too!

3 cups Oats (toasted at 350 degrees for 30 minutes, stirring every 10 minutes) 
1 cup Dehydrated Rainbow Marshmallow Bits plus more for topping (Found Here: ) 
1 cup Chocolate Chips (I used dark chocolate) 
1 1/2 tsp Cinnamon (I used a 4.5% volatile if you are using less add a little more)
1/4 cup Honey
1/3 cup Coconut Oil Melted 

Let your oats cool completely. Then add in your marshmallows. chocolate chips and cinnamon. Stir and add in your honey and coconut oil. Stir well until the mixture is sticking to each other. Prepare an 8×8 baking dish lined with parchment paper. Press your granola mixture into pan. Take a spatula and spray with nonstick spray or dip into some coconut oil. Press in marshmallow bits on top and make granola even. Refrigerate over night or at least 4 hours. Take out of pan and cut into inch thick strips and then in half. Wrap with saran wrap and store in fridge (if house is hot) and take out one at a time as desired! 

Of course if you want to use regular mini marshmallows that is completely fine too! I had some of these fun little guys around so I was using them up on the s’mores granola bars! They do make a great little snack and are super filling when taken for lunches or snack time for kids too! Kids will absolutely love the marshmallows on top! They also make for an awesome traveling snack too! No need to stop for snacks on those road trips! Probably my favorite part about the s’mores granola bars! 

Adding the cinnamon gives the taste of the graham cracker without all of the added sugar, which is great! I love that all of these products are natural so that there is not as much sugar added and the taste is out of this world amazing! These s’mores granola bars are also perfect to grab on the go in the morning. It can be so hard to think about breakfast in the midst of chaos and s’mores granola bars can be taken and eaten in the car or walking too.They are so easy to make too!

    These look delish, the marshmallows really scream vacation! LOL Even if I’m not traveling it would be a little treat for my tastebuds! I’ve pinned to save the recipe, I need to start making my own granola bars! This may push me over the edge!
