HI Ya’ll!
So this week has been pretty busy. I met with a new client, went all over North Carolina (It felt like it) to find scarves for our store so that we can do gift bags for a company for the fourth of July. They do this every year and it is so much fun to do them because of the creativity that goes into them. Every year we try to 1 up the prior. Anyways, let me get to why you really came here!
This is usually my favorite time of year. Harvest season! I love strawberries especially too! I freeze them, can them, blender them (?) and stuff my face with them! I just cannot get enough of them. Don’t worry I am like this in the fall too with apples. This will be the first year that I will can tomatoes, so if you have any suggestions please do not hesitate to share your knowledge! I need all the help I can get!
All through out May my mom and I have been getting a CSA share that only contains a gallon of strawberries so needless to say I have been doing a lot of canning! I have made strawberry butter and pie filling. I have used the butter in the morning on my toast and biscuits but I am not a huge pie fan. I like peanut butter pie, chocolate pie, rhubarb pie and a few others but I am just not a huge pie person. Sooooooo, how about a tart instead? Gluten free one at that too!
Gluten Free Tart crust:
3 Eggs
6 Tbsp Coconut Oil
3 Tbsp Raw Honey
1/2 tsp Vanilla
1/4 tsp Himalayan Salt
1/2 cup Coconut Flour
If you are making small tarts then you will have less baking time but this was a big tart!
I wrote this recipe originally for Mattie’s Pantry and I decided I to share it on this site because it is a huge favorite of mine and my mom’s especially.
I mixed all of the ingredients in my beautiful stand mixer, but if you don’t want to drag your’s out of the cupboard a hand mixer will do just fine.
press into a 3 inch tart pan (will make approx. 8) or into a large tart pan that is enough for 1. Put into a preheated oven at 350 degree oven for about 11 minutes (It doesn’t matter how big it only takes 11 minutes). Comes out soft and maybe even a little bit flaky. It is perfect for strawberry shortcakes, pies, dessert cups, fruit bowls, and so much more!
