I am seriously, hopelessly in LOVE with CHEESE!
Okay, so maybe not exactly a juicy secret, but still it’s so true! As long as it isn’t too stinky. So, when a neighbor surprised me with a basket full of goodies and Gouda cheese was in there I can certainly tell you I made plans for that right away!
The plans indeed were for this delicious Gouda pimento cheese!
Someone introduced me to pimento cheese when I was in college. I was studying with someone in the library had went down to the cafe to purchase this glorious snack and they were generous to share some with me and ever since then I have been hooked!
I have made pimento cheese before with other different types of cheese such as cheddar or Monterrey jack but I have been dreaming about Gouda pimento cheese and rightfully so! Because it was absolutely amazing!
I say was because it went fast in this house!
2 Cups shredded Gouda Cheese (grab one 7 oz block or wheel and shred)
8 oz Cream Cheese
1/2 cup Mayonnaise
1 tsp Roasted Granulated Garlic
Pinch of Cayenne Pepper
1/2 of a Jalapeno Pepper seeded (optional but so yummy!) Chopped
4 oz jar of Pimento peppers drained
Place all of your ingredients in a mixing bowl and stir, use a stand mixer or a hand mixer. Mix until blended well, then place in the fridge until firm but still spreadable. Serve with some tortilla chips or gluten free crackers (or regular crackers too).
As we move into the warmer weather seasons (I am so excited!) Gouda pimento cheese will hands down be the best thing to serve at any backyard cookouts, get togethers or parties. I love the way it pairs with just about any cracker and everyone else will too!
I also love the fact that Gouda pimento cheese is so easy to make!
