Honey Siracha Chicken Salad 
It’s hot. I mean really hot. The other day my car said 101 degrees in Charlotte, NC. I cannot even deal. I left Florida and it seriously followed me. It has made the pool all the more sweeter that is for sure. My tan lines are strong and my beer and snack game is even stronger. I mean literally.
ANYWAYS… I have to tell you about this delicious honey siracha chicken salad I created! It is seriously HOTT as well. with 2 T’s. The sweetness of the honey with the small kick of the siracha is just want I needed to find in a salad. I cannot tell a lie.
I will let you be the judge of that though. I love making this honey siracha chicken salad as a meal prep for the week. I know I am one of those people… I can’t help it. I love having meals ready for me in the morning for lunch or dinner. It makes coming home easier during the week when I am exhausted and ready for bed.
Honey Siracha Chicken Salad 
Chicken:
4 chicken breasts ( I like thin sliced breasts)
1/2 cup Soy Sauce (I use low sodium)
1/4 cup honey
2 Tbsp Chili Sauce
1 Tbsp Rice Vinegar
1 -2 tsp granulated Garlic (depending on taste)
1 tsp Ginger
1 tsp siracha (not bad at all!)
Salad:
1 head of Green leaf lettuce
1/2 bag of Coleslaw Mix
Chow mein noodles
Sliced almonds
Dressing: Oriental ginger dressing
Mix all of your ingredients for the chicken marinade together. Then add chicken (I get 2 breasts and filet them so that they are thinner). You don’t have to let the chicken marinate but I usually do at least 15 to 20 minutes. The longer the better. Warm up some olive oil in a pan over medium heat. Place chicken in the pan and spoon some marinade into the pan on each side while cooking. Cook chicken on each side for 5-6 minutes. There should be a little bit of char.
Wash and chop lettuce. Mix in with the coleslaw mix. portion out the lettuce and coleslaw mix four ways. Slice chicken and place on top with sliced almonds and chow mien noodles. I used oriental ginger dressing to dress my salad. You can find the recipe for it here: Oriental Ginger Dressing .
Now it is just time to dig in.
Can I say “OOOOMmMGGGGG SO Freaking DELICIOUS!”
I am going to be completely honest here and give you a sneak peek into my tastebuds… I don’t like siracha at all. It has a weird smell, weird texture and the taste is also weird. It is honestly like a smoky hot taste that you would not expect from it. BUT… When added to something sweet, siracha seriously make every dream of sweet and spicy come true. I have been on a sweet and spicy kick here lately and I don’t think I could be more proud of this honey siracha chicken recipe recipe.
Don’t want a healthy, amazing, tasty honey siracha chicken salad (or rabbit food as some call)? That’s cool (if you are square). The chicken is amazing over rice or veggies or both. I sometimes make some peppers, mushrooms, onion and rice and stir fry the veggies in the extra marinade. It sooooooo yummy! I think I am going to need to grab some dinner soon…
