Have you ever wanted to try something but you are afraid you wouldn’t like it? This was me last Summer starring at Mexican Street Corn like a piece a of tasty meat… but I was just not on my adventurous game yet. However, shortly after that stand off with the delectable dish, I became a mad fan quickly!
So naturally, my next step was to try to make my own version of Mexican Street Corn. I tried probably a mix of like a million different recipes until I found the perfect one. Then I had to perfect it more. I just want you to know that this recipe is so delicious that you must be prepared.
Mexican Street Corn
2 Cups Corn (I used Frozen)
1 can of Black Beans
1/2 cup chopped Bell Peppers
1/2 cup Diced Tomatoes
1/4 cup Diced Red Onion
Pinch of Cilantro
1 cup plain yogurt (I used non-dairy but any plain yogurt will do)
1 TBSP Lime Juice
1/2 tsp Paprika
1/2 tsp Cumin
Salt and Pepper to taste
Take the corn and roast in a frying pan for about 15 minutes or until the corn browns. Take off the heat and add in your black beans, peppers, tomatoes and red onion. Set aside.
Mix together all of your ingredients for the dressing and pour over the corn mixture and stir. Then pinch over the cilantro into the Mexican street corn. Serve!
This Mexican Street corn is so delicious! Sometimes, when I want more corn, I just add in a cup more to give it a little bit of a sweetness. It is so good to have as just a side, on corn chips, or my favorite, on fajitas or tacos! My mom has been eating here lately by the bowl full and her and I together cannot stop. It is such an east recipe to create.
Be creative with this Mexican Street Corn recipe! I sometimes add avocado or cheese to give it the extra-ness you want! Also, chili powder is a great addition to the dressing a pinch or two gives it the kick I like.
