Paleo Strawberry Sorbet
You scream for ice cream??? Okay, well maybe strawberry sorbet but hey who is keeping track? We have had so much luck here with strawberry season (Yes, sadly it is over here), but I was able to freeze/can/eat a heaping ton (That is a real unit of measure in my head). And every year I am just excited to come up with new recipes much like this one!
I have been inspired to do this paleo strawberry sorbet by a lot of bloggers. I mean a ton! I have seen so much ice cream here in the last week that I had to come up with my own! Of course in my mind it had to be some what healthy. I know it is dessert but we have to be a little bit conscious about what we eat right?
Besides who said being healthy means we have to skip on the taste? Because I can tell you for a fact (considering I was just shoveling some down my throat) that this strawberry sorbet is seriously not lacking in the taste department! Plus it is a great snack to cool down too during these hot summer months!
Paleo Strawberry Sorbet
2-3 cups Frozen Strawberries
1 can of Coconut milk (all fat and preferably unsweetened)
1 cup Almond Milk (vanilla or unsweetened)
1 tsp Vanilla (If not using vanilla almond milk)
2-3 Tbsp Coconut Palm Sugar
place all of your ingredients in to a blender. Use the ice crush button since the strawberries are frozen. Line a loaf pan with parchment paper pour the contents of your blender into the loaf pan and cover with saran wrap. Freeze for at least 6 hours or over night. Let sit out for at least 30 minutes before serving. This will help it be servable.
Doesn’t that just sound heavenly? You know what is even better when you serve this? pouring some chocolate sauce (you can simply melt dark chocolate chips and mix in a little almond milk) over the strawberry sorbet! It tastes like chocolate covered strawberries that were meant for you and your family! We love to enjoy this out by the pool after eating dinner or on a Saturday afternoon! It is simply one of the easiest and best desserts that there is to cool down with!
One thing that it will not be is as creamy as normal ice cream (hence why it is called sorbet), but the coconut milk makes it slightly creamier though and the almond milk gives it that great smooth taste of ice cream (with out actually being ice cream!).
Whenever I make this paleo strawberry sorbet I usually end up making 2 because it goes quite fast in my house. However, I am lactose intolerant so having this in the house prevents me from eating things I will regret later! Curbs the cravings without any side effects! Although, my best friend, and college roommate, just told me there is lactose free ice cream out now… I wish she wouldn’t have told me because now I will be eating it all. (Thank you Bethany!)

This sounds so delish. We’ve been doing a lot of fruit smoothies, and I love freezer ice cream. I’ve never made it lactose free though, I will definitely be picking up some of the coconut milk and almond milk to whip this up! Nothing better on a summer evening than a bit of ice cream, except a bit of ice cream with chocolate sauce! YUM!
