Pub Chips!
What is your go to snack when you are looking for something salty and crunchy? My answer, probably like any other person, would be some potato chips. Not just any chips though, but those amazing, thick cut and super easy pub chips!
As I have told you in a recent post, Paleo Zucchini Chips, that I jut happened to obtain a mandolin. Not the instrument but a slicing mandolin! I have never been so excited to have one! However, I have been making everything with it! Any form of potatoes, squash, cucumbers or anything slicable. ( not sure if that is a word but I am going with it) And it has turned out to be a tasty one.
SOOOO I tried my hand at some pub chips!
Here in North Carolina pub chips are a staple in bars, restaurants and of course pubs! They go together with everything like peanut butter and jelly. Every time I go to order food at a restaurant I almost always hear someone ask if they have pub chips or see of the chips on the menu are house made pub chips. When I first moved here I thought everyone was just weird (THEY ARE), but I have since come to know and love these pub chips.
We made them about a week ago and it was seriously all we had for dinner! Talk about a balanced diet but we were only in the mood for pub chips.
Pub Chips Recipe
2 Large white potatoes (about 4-5 inches long)
3 cups water
1 Tbsp Pink Himalayan Sea salt
2 cups Coconut Oil
2 tsp Roasted Granulated Garlic (or Garlic powder is fine)
1/2 tsp more of Pink Himalayan Sea salt
Wash, peel and slice your potatoes with a mandolin or slice about 1/8 of an inch thick. Mix together your tablespoon of salt with the water and pour over top of sliced potatoes in the bowl. Let sit for about 20 to 30 minutes. Drain and rinse quickly. Pat dry (not too dry).
Warm your coconut oil in a pot or pan. I used my frying pan. Lay slices in the pan (make sure they are free floating). Make sure it is hot enough by adding a little one in to see if it starts to fry. They will start to turn brown in the middle of the potato slices. This will take about 6-7 minutes depending on how hot your oil is. While your first batch of pub chips are frying mix together the 1/2 tsp of salt and garlic. Take out and drain on a paper towel and immediately sprinkle with the garlic mix. Shake a little bit and place in bowl. Continue the sequence until all of the potatoes are done. Serve with your favorite dip as an appetizer or snack (or dinner and lunch).

We love to make pub chips when we are going to a party, make some panini sandwiches at home, when we make some fried chicken tenders or if we want a snack. Sometimes I will make 2 recipes full so that we have enough for a couple of days. We love having these pub chips instead of buying them from the store because they are cheaper and they are also tastier too!
The thing we love the most about pub chips is that they are thicker so they they have more of a chip and crunch too. We like to dip them in ranch or guacamole (don’t knock it until you try it!)

These looks really good and doesn’t look that difficult. I just may have to try making these.
You know, we don’t have chips often, but when I am craving that crunchy salty bit, chips are the only thing that will fill the need! We usually bake our chips, but I’ve not tried coconut oil for frying them. These look so delish! Especially with the sauce! YUM!
