Sweet Potato Chips

 

 Snacks! The bane of my existence! What gets me into trouble almost everyday because lets be honest who doesn’t eat when they get bored every now and again? (Some more than others) Insert these sweet potato chips because they are so flipping delicious that I could cry! 

Okay, maybe lnot cry but these sweet potato chips definitely better than 99.9% of the ready made snacks out there that claim that they are fat free, sugar free, cholesterol free, gluten free and vegan. Well maybe not vegan but you get the point. 

Here lately I have been so bad that I have been turning to cheese-its, potato chips (sour cream and onion are my addiction) and candy… I needed help! So, I armed myself with 2 sweet potatoes that my mom bought because she thought she would eat them… I took my mandolin out and grabbed some coconut oil and presto! These beautiful sweet potato chips were born! 

Sweet Potato Chips 

2 sweet potatoes sliced thin 
Salt (I used pink salt)
water 
salt to taste
2 cups oil

Slice your potatoes thin with a mandolin (unless you have the special touch and can do it free hand). Place your sliced potatoes in a bowl and cover with salt water (about 2-3 tsp of salt at least) and chill for 30 minutes to soak. Take out and place on paper towels to drain and dab dry. Take about a 2 cups of oil ( I used coconut oil but vegetable oil is perfect) and heat to about 300 degrees Fahrenheit ( or until it is hot) add in a few potato slices at a time but they get nice and crispy about 3-4 minutes . Take out and drain on paper towels and salt to taste. 

HELLO BEST SNACK EVER! 


Dipping in ranch is a must! If you don’t like ranch I am sure there are other dips to try too. Adding a little bit of spice into the mix also can go a long way with these sweet potato chips too! Adding some garlic on to the chips is also a great addition just sprinkle some on after coming out of the oil. You can also coat with a little bit of cinnamon sugar to bring out the sweetness of these gorgeous beauties too! Dipping icing is a must if that is the case 

Seriously, what was I thinking buying all those empty carbs? These are full of antioxidants, vitamins and full of complex carbs so they keep you fuller longer… plus any good carb is a carb I need in my life… just saying. I can’t get enough of these sweet potato chips! They have become almost like a staple in this tiny house and we keep them around for about a week if they last long. they can get soggy if you don’t let them completely cool so just keep that in mind!
