Oh what a year it has been!
Started a blog, have a successful business and had such a blessed Christmas!
It truly has been a great year and the more that I look back at it the more I can’t help but smile!
I love running a business even if it can be stressful and sometimes crazy.
Today is January 1, 2016 and I thought today would be a great day to reminisce about the last year and look at which post were you, the readers’ favorite! I can honestly tell you that I cannot pick out a favorite because well the all tasted absolutely amazing! I can also tell you that I had so much fun doing every single post no matter how big or small they might have been.
Lets count down most popular starting with Number 10!
10. Peanut Butter Fudge
This beautiful dessert was actually a recent post for the holidays! The recipe is actually from my Great Great Uncle Max who use to make it all the time. I never met him that I remember but if he was anything like his fudge I think we would have gotten along great! I have so many recipes that have been handed down through my family. I have some that date people can’t even remember who they came from and they were my great great grandparents. We always make this around Christmas time and we try to give it away before we eat it all!

9. Chai Oatmeal
Okay, I am so glad this little recipe cracked the top 10 because I seriously eat this at least once a week regardless if it is hot or cold outside! It is such a good breakfast to jump start your day not only because it is oatmeal, but because all of the added spices like, cardamom, cinnamon, cloves and the apples added just make it even more amazing! Adding a little bit of coconut oil to the already nutrient rich breakfast is great too!

8. Paleo Sweet Potato Casserole
Number 9 in the countdown is a personal favorite of mine! My great grandma would make a rendition of this sweet potato casserole every Thanksgiving and Christmas. It was always a favorite among the family and at this point I was completely off refined sugar so I added my favorite coconut palm sugar to this amazing recipe and that was all it needed to make it that much more interesting. The Paleo Sweet Potato Casserole is one to have at every holiday meal!

7. Vegetable Fried Rice
Vegetable Fried Rice, a completely vegan recipe that I started making when I was in college and was completely vegetarian. I probably made this at least twice a week for dinner. I was always craving this dish and it was so simple and I was able to add just about any vegetable to it! Nowadays I can add my own vegetable or meat to it to make it a complete meal! It is a fun recipe to be creative with!

6. Homemade Pumpkin Butter
I can honestly say that I am so happy that this made the countdown! I am eating this yummy butter especially in the morning on a piece of toast or English muffin! Made with honey and it is healthy and full of spices like cinnamon, cloves and cardamom. It is also perfect to mix with BBQ sauce and pour over chicken or boneless pork chops in the crock pot to make a delicious BBQ sandwich!

5. Paleo Apple Crumble
This crispy, yummy and fruity crumble is my mom’s recipe from when my mom was heavy on making fruit crumbles. I love using this recipe in the summer time for berries to make a nice dessert with a tiny bit of cool whip or coconut whip on top, depending on which diet I want to follow that day! It is both paleo and completely tasty!

4. Paleo Breakfast Quiche
I love making egg muffins in my tin and these tiny quiches are no exception. Completely paleo unless of course you add cheese to them like I do sometimes! I love dipping these into salsa in the morning if I have time to sit down and eat but they are perfect for on the go as well if you are in a hurry! Simply make them up at the beginning of the week and then eat 2 or 3 in the morning on your way out the door!

3. Gluten Free Cherry Cheesecake Cupcakes
This recipe was from when I just started out and only recently started gaining a lot of views! When I made these yummy cupcakes I made them originally for family that had came into town. They all loved them so much I felt I needed to share the recipe with my readers. It was an easy cupcake to make and it was completely gluten free which was my favorite characteristic.

2. Paleo Zucchini Tortillas
This is probably the recipe I use the most on my blog personally. I keep shredded zucchini in the freezer all year round so that we can make these if we want to make pizzas on the fly or if we need tortillas for breakfast burritos. Once they are made we keep them in the fridge for later use too. You can also keep it all together as 1 crust and make a big pizza out of it too!

1. Crock Pot Taco Soup
This was the most popular post of 2015! It was such a yummy soup and is great during the winter or cool rainy days! I love putting this soup before I go to work in the morning and then coming into the house smelling it after a long day. Sometimes it is just great knowing that dinner is ready as soon as you walk in and you don’t have to do anything but set the table and serve with a little bit of cheese and chips! Taco soup was one of the highlights of my soup making so far. I love the fact that I can make it on the stove top and it will be ready in about 1 hour or I can set the crock pot and forget it!

Wow, such great recipes and healthy too. I can’t wait to try the Paleo crumble. My sister is big into Paleo and after the holidays I really need to eat right. Thanks.
Thank you! You and me both! I started eating better about 3-4 years ago when I went vegetarian… I know that sounds drastic but it got me eating other things besides french fries.
